For protein, I keep on hand cans of crown prince smoked oysters or clams, skipjack tuna, and the epic bison bars. I also try to keep avocados on hand. In a hurry, a protein and an avocado and a piece of fruit make a fast meal that holds me a long while.
roasts are easy to make and slices of it take the place of deli meats, in Lettuce wraps with other veggies and a quicky guacamole.
Whenever I bake sweet potatoes I always make several at once that way I can pull one out for a quick breakfast (top with coconut milk, honey and cinnamon), or lunch.
