Peel potatoes and slice in half length wise and again until you have the size fries you prefer. Blanch fries in boiling water for 3 minutes, drain in colander. Shake fries out onto a grease baking pan. Season well with salt and pepper. Bake in oven for 15 to 20 minutes, turning a couple times. Two potatoes makes about 3 or 4 servings.
