Season the halved chicken breasts with salt and pepper to your liking. Top each chicken with a slice of jalapeño, then carefully wrap a slice of thin bacon around each chicken.Heat a skillet over medium high heat. Once hot, add the chicken and let cook for 3-4 minutes. Flip and let cook for 2-3 minutes. Use tongs to carefully place chicken on it's sides to cook the bacon all the way around the chicken.Once the bacon is fully cooked remove chicken from pan and place on a paper towel lined plate to drain.Meanwhile place all the cowboy caviar ingredients in a large bowl and gently mix.Serve alongside the spicy bacon wrapped chicken with some tortilla chips.
