1. In a greased 5-qt slow cooker, layer a third of each of the following: potatoes, bacon, onion, green pepper and cheese Repeat layers two times. 2. Whisk eggs, milk, salt and pepper and pour over layers 3. Cook mixture, covered on high for 30 minutes. Reduce to low, cover covered 3.5 - 4 hours our until 160°. 4. Try baking for about 45 minutes at 350°.
