  • 1 1/2 cups flour
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/3 cup sugar
  • 1/2 cup wheat bran
  • 1/4 cup egg whites
  • 3/4 cup vanilla yogurt
  • 1/4 cup ground flaxseed or flaxmeal
  • 1 1/2 cups ripe bananas mashed
  • 2 tbsp maragarine melted
  • 1 mint aero bar chopped

Preheat oven to 350F. Spray 9x5" loaf pan lightly with cooking spray and set aside. In a large bowl, combine flour, wheat bran, sugar, ground flax, baking soda, baking powder, cinnamon, and salt. In a medium bowl, whisk together bananas, yogurt, eggs, butter, and vanilla. Add wet ingredients to dry ingredients and stir just until moistened. Fold in chocolate, don't over mix batter. Pour into pan. Bake for 50 min. Cool on rack.
