  • 1 tsp kosher salt
  • 1 tbl olive oil
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • 1 lime
  • 1 can green chilies
  • 4 large garlic cloves
  • 3/4 cup carrots (about 2)* diced
  • 3/4 cup onion (1 medium) diced
  • 3/4 cup celery (about 2 stalks)* diced
  • 2 cans black beans (rinsed and drained)
  • 2 cans low sodium beef broth (or 1 box)
  • 1/8 tsp black pepper (i use more)
  • 1/2 tsp dry oregano leaves

*May be doubled to make soup thicker Large saute pan on med/high heat. Add olive oil, heat. Add carrots, celery, onion, garlic, saute 4-5 min. Add beans, chilies, broth. Stir. Add salt, pepper, chili powder, cumin, oregano and bay leaf. Simmer uncovered for 20-25 minutes. Remove. If desired, put in blender and puree. Squeeze in juice from 1 lime. I like to garnish with tortilla chip, avocado and cheese.
