This is a favorite recipe of mine from the Amish archives. Homemade honey bars were featured in The Amish Cook’s Baking Book and the photo that appears here is a wonderful one that photographer Betsy Dellaposta took, sort of an artistic shot of the bars. I love this recipe because it is so easy to make and I must say the first time I made it I raised my eyebrows at the mayonnaise in the glaze but it really does come out to be a tasty treat. Now you can try them with the recipe below. Hint: I leave the walnuts out when I make them but for “crunch lovers”, of course, leave them in.   • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 3/4 cup vegetable oil
  • 2 tablespoons mayonnaise
  • 1/4 cup honey
  • 1 tablespoon water
  • glaze:
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 1 cup walnuts chopped
  • 1 1/4 teaspoon ground cinnamon
  • 1 large egg lightly beaten

Preheat the oven to 350°F. In a large bowl, stir the sugar, flour, baking soda, and cinnamon until evenly mixed. Then add in the egg, vegetable oil, honey, and nuts. Stir until the mixture is smooth. Spoon into an ungreased jelly-roll pan or 9 by 13-inch pan. Bake until a toothpick inserted in the center comes out clean, about 20 minutes. To make the glaze: In a small bowl, stir together the powdered sugar, vanilla, water, and mayonnaise until smooth and creamy. Spread onto the honey bars while they are still warm. Store the bars in a sealed container or cake safe. These will stay fresh for 3 to 4 days.
