Start with proofing the yeast. Pour milk into a small bowl. Heat it in the microwave for 30 seconds. Stir the milk with whisker, add ¼ cup sugar and milk, and then stir it until all dissolves. Place it into a warm place and let the yeast proof.Cut the butter into smaller pieces. Place into a small bowl. Heat it in the microwave for 30 seconds or until melted. Set aside and let it cool until ready for it.Preparing the batter:Beat eggs and the rest of ¾ cup of sugar together on high speed for 5 minutes. Add salt, vanilla and melted butter; stir it with a hand whisker. Then add proof yeast stir it with a hand whisker again. With dough hook attachment stir in sifted flour adding one cup at a time until the dough is smooth and not sticky, for about about 10 minutes (if you don’t have kitchen aid mixer you can do this process by hand as well). Remove the hook attachment. Place the dough into a warm place and let it rise for couple of hours.While the dough is proofing, we can work on the filling. Add Farmers Cheese and cream cheese into a medium bowl. Mix the cheese on medium speed for couple of minutes or until combined. Add sugar and pure vanilla extract. Mix it again. Add egg and mix well for 2 minutes or until all combined. Mix in raisins. Let it sit on the counter top until ready to use it.How to Make Buns:After the dough proofs, remove the dough from a bowl onto a lightly floured surface, and split the dough in half.Roll out first half of the dough into a large rectangular.Roll out the second half of the dough into a large same size rectangular on a cutting board (it’s easier this way to flip the dough onto the first roll out rectangular). Cut out small holes with a glass.Flip the cutting board over the first roll out dough. Remove little cut out circles. Then cut out buns with a large cup or any large circle shaped object.Remove that extra not cut out dough and then place buns onto a pan lined with parchment paper.Preheat the oven to 350F. Add 2 full ice-cream scoops of prepared cheese with raisins onto each bun. Place it into a warm place for the dough to proof again for about 30 minutes. Repeat the steps how to make buns until you are done with all the dough.Before baking the buns, make the egg wash and wash each bun on the dough side only.Bake the buns in the oven for 25 minutes or until the edges of the buns are golden brown. Remove from the buns from the oven. Cool the buns. Serve warm.Enjoy!
