Ran out one day and decided to experiment with the large selection of spices I have on hand. This comes very close.

  • 2 teaspoons curry powder
  • 1 1/2 tablespoons coriander seed measure seeds and then grind
  • 1 tablespoon ground hot chili peppers
  • 1 teaspoon caraway seed measure seeds and then grind
  • 1 teaspoon lemon pepper ground fine

This will fill a standard spice jar to about half. I grind my seeds in a coffee grinder. Make sure all is ground fine. Mix well. Some say to use caraway seed as a substitute but it lacks that earthy pepper-like smell of cumin and has too much licorice in the taste. I find that adding the lemon pepper gives it more of the citrus flavor cumin in known for.
