  • 1/3 cup fresh cilantro chopped
  • 1/4 cup onion (white) finely chopped
  • 1 small jalapeno pepper (or serrano) finely chopped with the seeds
  • 1 small garlic clove minced
  • 1 small fresh lime
  • 1/2 teaspoon salt to taste
  • 1 dash ground black pepper to taste

In a medium-size mixing bowl, add 1 tablespoon of fresh squeezed lime juice. Add the remaining ingredients; toss to mix. Test and season to taste with the lime juice and salt. Serve chilled. Note: This recipe will keep in the refrigerator for one day. Drain any excess liquid before serving.
