Begin by reducing your apple cider. In one small saucepan, pour 1 cup of apple cider. Bring the cider to a low boil over medium heat, then reduce to a simmer for 10-15 minutes. Once the cider is reduced, place it in the fridge to cool. This step is optional, but recommended.In a separate saucepan, place 3 cups of apple cider. Bring to a low boil over medium heat. Let the cider reduce over medium heat for 45-60 minutes, until you have a thick caramel sauce. When the cider gets very low and thick, you will need to reduce the heat to stop it from boiling too much. Once the sauce is thick and caramel like, remove it from the heat and set aside.While your caramel is reducing, bake the donuts.Preheat oven to 350 degrees.In a small mixing bowl, combine the dry ingredients. In the bowl of a stand mixer, cream together the shortening and sugar. With the mixer on, add in one egg at a time, and then add in the remaining liquid ingredients.Pour the dry into the wet and mix until well combined. Pour the batter into a greased donut pan and bake for 12-15 minutes, until cooked through. Let cool, then transfer to a wire rack.Dip or drizzle the reduced caramel onto the apple cider donuts.
