  • 2 large eggs
  • 1/2 cup canola oil
  • 1 1/2 cups sugar
  • 1 2/3 cups all-purpose flour
  • 1/2 teaspoon pumpkin spice powder (i bought this product at tra there are many good brands out there, or you can use 1/3 teaspoon nutmeg).
  • 1/3 upwalnuts chopped
  • 1/3 upraisins chopped
  • 1/3 upcranberries chopped
  • 1/3 umpkinseeds unsalted
  • 1/3 upshredded carrots (optional)
  • 2 tablespoons ground flax seed (optional)
  • 1 cup canned pumpkin (puree unsweetened)
