A concoction of various chile recipes that my wife and I can both live with. Easy to make and you can adjust the spices as it cooks.

  • 1 28-oz can crushed tomatoes
  • 1 lb ground beef
  • 2 onions chopped
  • 1 tb worcestershire sauce
  • 1/2 ts oregano
  • 1/2 lb sausage meat
  • 5 cloves garlic sliced thinnly
  • 1 tb chili powder
  • 2 cubes beef boullion crushed
  • 4 hot pepper rings *
  • 1 dash louisianna hot sauce or other hot sauce
  • 1/2 ts paprika
  • 1/8 ts ground cumin
  • 1/8 ts cayenne pepper
  • 1 14-oz can red kidney beans

Combine sausage meat, ground beef, onions and garlic in skillet and brown. Place all ingredients in slow cooker and cook on low - medium for 6 - 8 hours, stirring and tasting occasionally. As the flavours meld you may want to add more hot sauce and/or cayenne pepper to suit your tast. My wife doesn''t like food as spicy as I do so we try to come to a happy medium as it is cooked. * I use the same type of hot pepper rings you normally get for your sausage on a bun at varous street venders.
