Pre-heat oven to 425 F.Scrub, wash and dry potatoes.Wrap in plastic wrap, poke with fork or knife and microwave potatoes on high for 4 minutes. This step can be skipped, if desired. Increase baking time to one hour, if so.Remove from microwave and let cool enough to handle.Pour salt onto a small plate and set aside.Rub olive oil completely over potato.Roll potato well in salt.
