Thinly slice the zucchini lengthwise with a vegetable slicer.Cut radishes into very thin slices.Cut red pepper, cucumber, and carrots into thin strips.Spread one thin slice of zucchini with about 2 tsp of hummus.At one end of the zucchini, add one slice of radish and lettuce. Then layer on one strip of carrot, red pepper, and cucumber.Roll zucchini over top of vegetables and enjoy!
