Preheat oven to 350 degrees. Line a large baking sheet with parchment paper.In a large bowl combine oats, quinoa, pecans and pumpkin seeds.In a medium bowl add pumpkin, coconut oil, maple syrup, coconut sugar, five spice and salt. Whisk to combine.Pour over the oat mixture and stir until fully incorporated.Spread the mixture evenly & thinly on baking sheet and bake for 15 minutes. Stir or shake if needed. Rotate the pan and bake for another 10 minutes or until golden brown.Let cool for at least 20 minutes (this helps form the crunchy clusters) before scooping into an airtight container.
