  • 1 tsp pumpkin pie spice
  • 2 tbsp chia seeds
  • 2 cups of quick cooking oats – i like bob’s red mill gf
  • 1/2 cup of canned pumpkin puree
  • 1/2 cup of peanut butter – or nut butter of your choice
  • 3 tbps maple syrup

Combine all ingredients in a large bowl.Mix everything until it is very well combined.When everything is incorporated, start to roll pieces of the "batter" into balls.Each ball should be about 1.5-2 tbsp of your mixture. You can also use a cookie scoop if you have one of those!I find that putting these in the freezer for 20 minutes sets them well.They can be stored in an airtight container in your fridge for about a week.These are excellent additions to any lunch box or snack pack!
