Test your dates for moisture. If they seem too dried out, soak them in hot water for 10 minutes. Remove the pits and place the dates in the food processor. Add the nuts, cocoa powder, and vanilla, plus 2 tablespoons of water. Turn on the food processor and chop until the mixture forms a smooth dense paste. Line a 8x8 inch baking dish with wax paper or parchment paper. Spray the paper with non-stick coconut oil spray. Scoop the mixture into the dish and press until packed and smooth. Sprinkle the coconut over the top and press a little. The brownies are ready to eat at this point, but they do cut easier if you allow them to air dry for a couple hours. Cut into 36 small pieces. Store in an air-tight container.
