Preheat oven to 150C/300F.Place muffins on a baking tray, cut side up, and top with cheese.Mix Sausage Patty ingredients in a bowl - use your hands to mix it real good!Shape into 4 patties. Make them slightly larger than the muffins because they will shrink when cooking.Heat ½ tbsp oil in a large non stick skillet over high heat. Add patties (you might need to do it in 2 batches) and cook the first side for 2 - 3 minutes or until browned. Flip then cook the other side until browned. Place sausage on the cheese on the muffin and return the tray to the oven.If you have egg rings (to cook round eggs), spray the rings with oil and place in the skillet. (See note 1 for alternatives, including an ingenious way using tuna cans!). You should not need more oil, but add a bit if your pan is dry.Crack egg into the rings. Add around 2 tbsp water into the skillet then cover with a lid. Cook for 1½ to 2 minutes or until egg is cooked to your liking. Remove ring.Remove tray with muffins from the oven. Top sausage with egg then with remaining muffin half.Serve and enjoy!
