  • 2 cups old fashioned oats
  • 1/4 cup natural peanut butter
  • 1/3 uproasted salted peanuts chopped
  • 1/4 cup + 1 tbsp honey
  • 1 tbsp coconut oil melted (or another healthy oil)
  • 1/4 cup (50 g) chocolate chunks chopped (i used green & black's milk chocolate)

In a large bowl, mix together all the dry ingredients (oats, salt, peanuts).In a smaller bowl, whisk together all the wet ingredients (honey, peanut butter, vanilla, melted coconut oil).Mix the wet ingredients into the oat mixture and stir until evenly coated.Meanwhile, warm up the largest skillet you have on the stove over medium heat. You need a big skillet as you want the granola spread out nicely in a single layer.Set a timer for 15 minutes. Place the granola in the skillet and allow to cook, turning frequently with a spatula every 15-20 seconds. Don't leave it unattended or it may burn.After about 10 minutes it will begin to brown. Cook another 3-5 minutes until golden all over. Remove from heat, spread granola on a baking sheet. I like to line it with parchment paper or non-stick foil.Once mixture is almost cool, mix in the chocolate chunks or chocolate chips. Once completely cool, store in a container and keep at room temp.
