For very little ingredients, this sauce is very flavourful. I make large batches of this and portion it and freeze it. I have successfully used it on pizza, pasta, subs, breadsticks, base for soup/chili, chicken parmesan, etc.

  • 1 onion chopped
  • 1 tablespoon oil
  • 4 garlic cloves minced
  • 1st bowl (large)
  • 1 dash salt and pepper
  • 1/8 cup parmesan
  • 1 dash sugar
  • 1 can tomato paste (6 ounce/156 ml)
  • 1/4 cup vegetable stock
  • 2 cans canned tomatoes (whole) (28 ounce/796 ml) mashed
  • 1 bunch fresh basil chopped

Heat oil in a large saucepan. Add onion and cook until soft. Add garlic and tomato paste, until warm. Add vegetable stock, tomatoes, sugar, salt & pepper and bring to a boil. Add parmesan and basil and simmer for 1 hour.
