  • 3/4 cup cornmeal
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/4 cup melted coconut oil
  • 1 cup unsweetened vanilla almond milk
  • olive oil or coconut oil cooking spray
  • 1 1/4 cups whole wheat pastry flour (i did not test this with it would definitely have a different texture)
  • 3 tbs raw sugar

Preheat your oven to 400 degrees. Spray an 8X8 baking dish with cooking spray, set aside. Whisk together the flour, cornmeal, sugar, baking powder and salt. Stir in remaining ingredients until just combined. Pour into pan. Bake 20 minutes or until a toothpick in the center comes away clean. Let cool, then cut into 9 squares.
