  • 1 stalk celery chopped
  • salt and pepper to taste
  • 1 medium carrot chopped
  • 1/2 stick butter
  • 1/3 c flour
  • 1 t onion powder
  • 2 slices bacon, cooked and chopped **i add more to taste
  • 1 leek chopped
  • 1 medium potato finely chopped
  • 4 c fish stock
  • 1 c white fish about 1/2 pound
  • 1/2 pound shrimp medium chop
  • 1/2 pound scallops halved or quartered
  • 3/4-1 c cream
  • 1/3 c parsley

Melt butter and add onion powder. Add leek, carrot, celery and potato and cook until vegetables are soft. Add flour and mix well. Add stock and heat slowly. Add fish, shrimp, scallops and cook slowly. Then add cream, parsley and salt and pepper. Add bacon last. Use extra parsley for garnish. I serve with hickory smoked salt.
