  • 3 each sweet potatoes peeled and cut into bite sized cubes
  • 1 pinch ground ginger

Preheat oven to 350 Spray baking dish with non-stick spray. Peel and cut potatoes into cubes. Put in baking dish. Melt butter in microwave and pour over potatoes. Add remaining ingredients. Toss to coat evenly. Bake 60 minutes. Stir once or twice during roasting
