  • 3/4 cup brown sugar packed
  • 3/4 cup honey
  • 1 tbsp. vanilla extract
  • 1/2 cup coconut oil
  • 7 cups old-fashioned rolled oats
  • 1 1/2 cups almonds cashews and/or pistachios (i used all 3)
  • 2 teas. ground cinnamon (optional)
  • 8 ghiradelli dark chocolate squares chopped (optional, you can also use mini chocolate chips, white chocolate chips, and/or dried fruit)

Preheat the oven to 350' F.In a big bowl add the oats and the oil, mix until the oats are completely covered.Put parchment paper on a jelly roll pan and spread the oats and oil mixture evenly on the pan.Bake for about 20 minutes, stirring every 10 minutes.Remove the oats and lower the oven temp to 300 degrees.Place the baked oats in a bowl.Place the nuts in a food processor and process until chopped, I used a ninja! Worked perfect!Add the chopped nuts to the oats.Put the chocolate into the food processor or ninja and chop.Add this to the oats, also.Combine the honey and brown sugar in a saucepan and cook over medium heat for about 5 minutes, stirring constantly, until the sugar is dissolved.Remove from the heat and stir the cinnamon and vanilla into the sugar and honey mixture.Pour the honey sugar mixture on the oats.Stir until the oats and sugar mixture are thoroughly mixed together.Using the same parchment paper and jelly roll pan, spray with nonstick spray and pour the oat mixture on the paper.Press evenly and tightly into the pan. Bake at 300'F., until golden brown, about 35-40 minutes.Remove from oven and cool for about 5-7 minutes.Do not let the bars cool completely, or they will be to hard to cut.Cut the bars to the size you desire.
