This is my favorite soup to eat!!! My husband is funny about eating chicken in Mexican food, but I love it! You can make this as spicy hot as you want. I leave out the seeds because I can't take the heat...LOL

  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 medium bay leaf
  • 1 tablespoon dried cilantro
  • 1 pound chicken breast , cooked, shredded
  • 1 can (10 oz.) enchilada sauce
  • 6 medium jalapeno peppers , diced (pickled and seeded if desired)
  • 2 cups water (as needed)
  • 2 tablespoon bell pepper , diced
  • 1 can (15 oz.) tomatoes , diced
  • 1 medium onion , chopped
  • 2 cloves garlic , minced
  • 4 1/2 cup chicken broth
  • 1 can (11 oz.) mexican corn
  • 1 can (4.5 oz.) black olives , rinsed, drained, and sliced
  • 1 medium lime , quartered, squeezed, left in soup to cook
  • 1 tub (16 oz.) sour cream
  • 1 bag (12 oz.) tortilla chips
  • 1 medium avocado , sliced
  • 1 can (4 oz.) green chilis , chopped

In a 5-6 qt. crock pot, add all the ingredients EXCEPT the sour cream, avocado, and chips. (Add water or more broth if needed to just cover the ingredients.) Stir well. Cover and cook on low for 6-8 hours or 3-4 on high. Serve with sour cream, avocado slice, and the tortilla chips.
