I love Vodka sauce, but I became discouraged after ordering it out. I created this recipe because taking leftovers home in doggy bags made for an oily separated MESS the next day. The butter in this sauce is at a minimum, so it can be made ahead and heated up to serve. It even freezes and defrosts well.

  • 1/2 cup vodka
  • 4 cloves crushed garlic
  • dash crushed red pepper flakes
  • 1/2 lb thin sliced prosciutto
  • 1 - 2 tbs butter
  • 1 small can petite diced tomatoes (mostly drained mostly drained
  • 1 large can tomato puree (see note in recipe below)

Cut the Prosciutto into tiny pieces. You will need a good, sharp knife for this as it can be tough to cut through. Melt butter in a skillet on high and when sizzling, add prosciutto and garlic and sauté until prosciutto browns a bit. Add crushed red pepper flakes and stir. You can always add more later. Quickly add Vodka to HOT skillet. It should reduce very quickly. Watch out for steam. Don't lean over pan when you do this as it can cause a bit of a head rush! Reduce heat to medium. Add tomatoes and puree. I use Stop & Shop brand puree because it’s thick. Any other brand and you may need to add paste to thicken. Stir. Add sugar. Reduce heat to low. Cover and let simmer for about 10 min. Taste sauce. If it still seems too acidic, add a little more sugar. Continue simmering for another 5 min, tasting for acidity. Just before turning off sauce, add heavy cream. Mix well. Adjust amount of cream to your preferred level of ‘pink’. Serve over Penne.
