  • 1 tsp vanilla extract
  • 1/2 cup flour
  • 2 flax eggs (2 tbsp flaxseed meal + 4 tbsp water)
  • 1 cup dairy free milk (i used soy)
  • up to 9 slices of bread

Combine the flaxseed meal and water in a small bowl, and set aside for at least ten minutes.Slice the bread if you need to do so.Combine all of the ingredients in a medium mixing bowl, with the flax egg and flour last, in that order.Whisk to really well combine the mixture, and let rest, covered in the fridge for at least 8-10 minutes.In the mean time, prepare the cooking pan. You should brush the pan with some kind of oil. I recommend coconut oil.After 10 minutes, transfer the french toast mixture to your kitchen counter, and heat your pan over medium heat.Dip one slice of bread at a time in the mixture. The thicker the bread, the longer you should dip it in.Test how long you should dip the slice in the mixture, and adjust when you make the second one.Keep brushing the pan with oil if it starts to stick.Lower the heat once the pan gets too hot. Towards the end of the batch, you should have it on low.Cook each slice of toast until it is brown on both sides.Enjoy immediately!
