  • 2 cans oysters well drained
  • grated lemon rind optional
  • butter for sauteing
  • cracker crumbs unsalted

Dip well-drained oysters into egg mixture. Place on platter which is covered with cracker crumbs. Sprinkle more cracker crumbs over oyster tops press into oysters. Turn oysters over pressing move crumbs into oysters. Continue process. Sprinkle remaining crumbs over oysters and refrigerate. Fry up in butter. Do not let burn.
