  • 1/2 cup of chocolate chips
  • 1/3 cup of honey
  • 2 cups of quick oats
  • 3/4 cup of crunchy cereal - i used life cereal but you cou etc.
  • 1/4 cup of shredded unsweetened coconut
  • 1/4 cup of coconut oil or butter
  • 1/2 tsp of vanilla
  • 1/4 tsp of coarse salt
  • 3/4 cup of fresh cherries cut (i cut each into about 8 pie

Place the oats, cereal, coconut and chocolate chips in a medium size bowl and mix the ingredients together.Place a saucepan over medium heat and melt the coconut oil or butter.Add the honey, and brown sugar. Cook ever medium heat, stirring often, until the mixture comes to a boil.Turn to low and cook for another 4 minutes, continuing to stir.Remove from heat and stir in the salt, vanilla and the cherries.Pour the mixture over the dry ingredients in the bowl.Mix well.Spoon the mixture into a 8 or 9 inch square pan that has been lined with parchment paper or foil. If using foil spray lightly with cooking spray.Press the mixture very firmly into the pan. I like to use the bottom of my glass measuring cup to do this.Place in the fridge for at least two hours before cutting into bars.
