Preheat oven to 350 degrees. Spray a 9 x 5 inch loaf pan with cooking spray.In a medium bowl, whisk together the flour, baking powder and salt.In a large bowl, whisk the sugar, orange zest, oil, and apple sauce together until the sugar is well combined. Whisk in the eggs, vanilla, and yogurt.Add the dry ingredients to the wet ingredients and mix until just combined.Pour the batter into the prepared pan. Bake until the top of the loaf is golden brown and a toothpick inserted into the middle comes out with some moist crumbs, but no raw batter, about 42-45 minutes.In the meantime, prepare the glaze. Add 2 tbsp. sugar and the orange juice to a small saucepan and let it come to a simmer, stirring occasionally. Remove from heat and set aside.Let the bread cool in its pan for 10 minutes. Remove the bread from its pan and place on a cooling rack. Brush half of the glaze onto the top of the warm bread with a pastry brush (or you could spoon it on). Let the bread cool 10 more minutes and brush with the remaining glaze. Cool completely before slicing.
