Cuban Ajiaco made in the slow cooker. Ajiaco is a meal in itself. It reminds me of "Brodo De Casa" (much to my surprise - us Lussignani and Cubans share the same recipe) but the meat is left in the soup and has starchy root vegetables us Lussignani are unfamiliar with. It is great to make on a cold winter day

  • 1 onion chopped
  • salt to taste
  • 1 bay leaf
  • 2 potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • pepper to taste
  • 1 teaspoon oregano
  • 2 carrots
  • 3/4 lb flank steak
  • 1 lb pork loin
  • 1 16 ounce bag frozen root vegetables i prefer goya
  • 2 fresh corn cut into chunks
  • 1 48 ounce can chicken broth
  • soffrito:
  • 1 italian pepper chopped
  • 3-4 italian pepperoncini peppers chopped (splash of brine)
  • 1 tablespoon seasoning blend i prefer mrs. dash
  • 1/2 - 1 teaspoon cumin
  • 1 8 ounce can no-salt tomatoe sauce
