  • 1/2 tsp lime zest
  • 1 can full fat coconut milk regrigerated overnight (i used thai organic)

Chill the can of coconut milk overnight in the fridge.  Once chilled, open the can and scoop out the fatty white part into a mixing bowl.  Using the whipping attachment on your mixer, whip the coconut milk.  Then add the lime juice, zest and maple syrup and continue to whip until you get a mousse-like texture.  Transfer to serving dishes and chill until ready to eat. Enjoy!
