  • 1/2 cup almonds (i prefer roasted but can use raw)
  • 1/2 cup puffed millet (puffed rice would work too)
  • 1/4 cup quality dark chocolate (i used 70%)

In a food processor or blender mix together cashews, cherries, dates and cacao powder until it forms into a ball.Place ball in a large bowl and add almonds and puffed millet.With hands mix until all ingredients are combined.In a 9 x 9 dish lined with plastic wrap add mixture and press down with fingers until flat. Or use an adorable mini rolling pan like I did!Place dish in freezer for 15 mins.While bars are in the freezer melt the dark chocolate.After 15 mins remove bars from dish by pulling up the plastic wrap and cut into 12. Drizzle dark chocolate and let bars sit until chocolate has hardened.
