  • 2 tsp. (10 g/ 0.4 oz) salt
  • 25 g. (0.9 oz) oil (i prefer a mild oil for this such as grapeseed.)
  • 15 g. (0.5 oz) soy sauce
  • 25 g. (0.9 oz) vinegar (odette uses white vinegar. i
  • 50 g. (1.8 oz) sugar (odette uses white sugar but i think any sugar would do...)

Peel and quarter onions and put into Thermomix bowl with garlic clove, salt and oil. Process for 4 seconds/speed 5. DO NOT OVERPROCESS.Cook for 8 minutes/Varoma/REVERSE/speed 1.Add soy sauce, vinegar, sugar. Mix 2 seconds/REVERSE/speed 2.Cook 14 minutes/100°C/212ºF/REVERSE/Soft Stir with measuring cap off the lid.Allow to cool and store in fridge. (Flavor improves as the onions cool.)
