  • 1 tablespoon butter
  • 1 cup basmati rice
  • 1 3/4 cup chicken broth
  • 1 kaffir lime leaf
  • 1/4 lime
  • 1 tablespoon chives chopped

- Bring chicken stock, butter, Kaffir lime leaf, chives and juice of 1/4 lime to a high boil. - Add rice and return to boil. - Lower heat to medium low, cover and simmer for 12 minutes (do not remove cover during cooking). - Remove from heat, fluff with a fork and cover for 5 additional minutes. - Serve.
