Do you love Popeye's Red Beans & Rice??? Wish you could have a similar dish made from scratch?? I have a quick recipe that pretty much anyone can make, the recipe is super easy and only requires you have decent taste buds to season at the end to your liking. I am making the recipe as I made it, with the ingreedients I used specifically. This could easily be altered as you would like it to taste, and to your level of spice. I LOVE spicy food so I made sure this has KICK! So use this as a guideline and adjust the seasoning to your needs! This is a wonderful side dish that is similar to Popeye's Red Beans & Rice, however, made with killer ingredients and full of flavor! Sure to please!!

  • 1/4 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons butter
  • 1 tablespoon minced onion
  • 1/2 teaspoon chili powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon cumin
  • 1 tablespoon brown sugar
  • for beans:
  • 2 (15 oz) cans dark red kidney beans do not drain
  • 1 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper
  • 1/2 teaspoon webber's new orleans cajun seasoning
  • 2 medium jalapeno peppers fresh - diced small w/seeds
  • 1/4 cup stubbs hickory liquid smoke
  • water as needed while reducing
  • for rice:
  • 1 cup white rice
  • 2 cups water

Pour beans with all liquid into a saucepan, turn on the pan to medium heat. Begin adding all of the ingredients listed for the bean mixture. Once you have all the ingredients in the pot you will notice by that time your mixture should be getting pretty hot. Once the mixture starts to boil, stir frequently, boil like this for about 7-8 minutes. While the mixture is still boiling, get a Potato Hand Masher and start mashing up the beans, do not mash them completely, just about half way. You will notice the mixture starts to get pretty thick now that you have mashed some of the beans. At this time, I add about 1/2 a cup of water, stir and taste. At this point you can add more flavor, or water if necessary. Turn mixture down to about Low or Med-Low, I let them cook for around 30-45 minutes at this temp, all the while checking to see if I need to add water, stirring, and or seasoning as needed. The beans will reduce and extra liquid is usually necessary every time you make this. About half way through the beans, I get the rice going in a rice cooker. I just add all the ingredients listed for the rice into the rice cooker, give it a few stirs to get it all worked in, put on the lid, and turn on the magic... About 20 minutes later... Perfect rice, yummy! Serving: There are two ways to do this, you can either put the rice on your plate and then pour the beans over the top, or you can just dump the rice into the bean mixture, a little at a time, and stir until you have the desired consistency. It is really your choice, the only thing you will need to understand is that this is absolutely delish, and will be a crowd pleaser!!
