Heat a large pan (I use this white ceramic non-toxic, non-stick one) on the stove over medium heat. Add vegan butter and maple syrup and cook until slightly bubbly. This takes about 1 minute or less.Add the oats, nuts/seeds, salt and cinnamon (if using) and stir to fully coat with the melted butter and maple syrup.Continue cooking for about 3-4 minutes until the oats are lightly toasted and the nuts turn golden brown and smell fragrant. I usually turn the burner to low heat toward the end of the cooking process.Remove the pan from the heat and stir in the dried fruit and vanilla (if using). Let the granola cool completely before enjoying or storing. I like to push the granola into a pile in the center of the pan so that it dries in clumps for granola clusters. Once the granola is completely cooled it will become crunchy. The longer you can let it cool (without touching it) the better results.Serve with cold plant milk or plant yogurt along with fresh fruit. Store leftovers in an airtight container at room temperature.
