I don't usually cheat on recipes and use pre-prepared anything (you all know that I am a "from scratch girl") but on a blizzardy January morning, having no eggs in he house, we still wanted a hot breakfast. I grabbed what I had in the fridge and Voila! This was easy and delicious and when paired with a couple of Mimosas and a fire in the fireplace, it makes for a perfect snowy Sunday :o)

  • 1 package pillsbury croissants (grands)
  • 2 cups gruyere grated
  • 4 strips bacon cooked well done

Separate the four croissants and lay each one out flat. Top each croissant with less than half a cup of cheese, reserving the rest of the cheese. Break cooked bacon into small pieces and sprinkle one piece of bacon per croissant over cheese. Roll up croissants loosley and sprinkle the top of each croissant with remaining cheese. Bake on middle rack at 375 degrees for 20 minutes. Inside will be steamy hot! That's it. Enjoy! :o)
