  • 3 cloves garlic peeled
  • 5 tomatillos husked and rinsed
  • 1 anaheim chile halved
  • 1/2 white onion small

Heat a medium skillet over medium-high heat. (or use your grill) Add the tomatillos, chile, onion and garlic to the dry skillet and char on all sides, turning occasionally, about 6 minutes. Peel the garlic. Transfer the charred ingredients to a blender and process until smooth. Season with salt and pepper. Serve warm, room temperature, or cool. This sauce is amazing.
