  • 2 ea eggs
  • 1 cup canned pumpkin
  • 1 1/4 cup sugar
  • 1 tsp baking soda
  • 1/3 cup water
  • 1/2 cup oil
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 2/3 cup flour
  • 1/2 cup chopped walnuts optional

Combine oil,eggs, pumpkin and water. Sift together flour, sugar, cinnamon, salt, nutmeg and baking soda. Gradually beat into first mixture. Stir in nuts. Pour into greased and floured loaf pans(2). Bake at 350 degrees for 1 hour or until a toothpick comes out clean.
