I usually use 5 cups whole wheat flour and the rest white. Makes big loaves - almost 750 grams

  • 2 tablespoons salt
  • 3/4 cups milk
  • 12 cups flour
  • 2 tablespoons yeast
  • 1/4 cup sugar plus 2 tbsp
  • 3 3/4 cups water warm
  • 4 1/2 tablespoons margarine

Stir yeast into 5 cups of flour in a large bowl. Add margarine to warm water & stir until melted. Add milk, salt & sugar. Pour into flour & yeast & beat. Let stand 15 minutes. Beat. Add remaining flour to make a soft dough. (Usually use not quite 12 cups). Knead until smooth & elastic. Grease ball and place in bowl. Cover. Let rise to double. Knead down and divide into 4 balls. Let stand 15 - 30 minutes. Grease loaf pans with lard. Form into loaves & roll into pan to grease loaf. Let rise until 3/4 " over top of pan. Bake at 350? for 25 minutes.
