  • 2 tbsp shallots chopped fine
  • 1 tbsp fresh rosemary chopped
  • 2 cups mushrooms cremini or mixed or white
  • 1 cup dry white wine or dry vermouth
  • 1/2 tsp fresh lemon juice

Brown shallots in butter. Add sliced mushrooms and saute for a few minutes. Add the wine, lemon juice, and herbs. Simmer for 10 minutes. Season with salt and pepper to taste.
