This bread, made with dried blueberries, has a wonderful texture, presumably from the butter and oats. I consider it a dessert.

  • 2 tablespoons honey
  • 1 egg room temperature
  • 2 teaspoons instant yeast
  • 1 cup milk 80-90 degrees f
  • 3 tablespoons melted butter cooled
  • 2/3 cups rolled oats
  • 3 cups white flour
  • 1.5 teaspoons salt
  • 2/3 cups dried blueberries about 4 oz.

Put all of the ingredients, including the dried blueberries, in the bread machine. Set the bread machine to basic/white bread, with light or medium crust, for a 2 lb. loaf, and start. Note: The original recipe called for 3 cups plus 2 tablespoons of white bread flour. I made it with 3 cups (because I was scooping, not spooning) of ordinary white flour (because I didn't have bread flour). It turned out so well that I will keep making it this way.
