This is a quick and easy recipe for a great cheese dip. This dip goes great with tortilla chips as an appetizer, or you can have it as a side with most any Mexican food dish. Also, this is a great dish for the crock pot if you want to take it on the road for a tailgate party! I have posted another recipe for a similar dip but it is much more authentic tasting, you can find it under "Texas Queso con Carne"

  • 1 16-oz block velveeta
  • 1 10-oz can rotel (original or hot)
  • 1 lb ground beef (or sausage if you prefer)
  • 1/2 cup shredded chedder/monteray jack cheese for topping

In a skillet, cook ground beef over medium high heat until fully cooked. Drain grease and set aside. Cube Velveeta into 1 inch blocks, place cubes in a microwave safe bowl and microwave on high in 1minute 30 seconds intervals, stirring in-between each interval. When cheese is thoroughly melted, mix in Rotel and cooked ground beef, microwave for an additional 45 seconds and stir. To serve, place 1/2 cup of Queso in a bowl and top with a pinch of shredded cheese, makes 5 servings.
