I have had this recipe "Holiday Sweet Potato Casserole" for quite a few years. It is very easy to make (you use canned sweet potatoes) and is very good.

  • 1/4 cup milk
  • 2 teaspoons ground cinnamon
  • 1 dash salt
  • 1/2 cup brown sugar firmly packed
  • 1 can 30 oz sweet potatoes drained
  • 1/4 cup butter (softened) topping
  • 2 tablespoons flour or corn starch gf use corn starch
  • 1/2 cup chopped pecans if desired

1. Heat oven to 350 degrees. 2. In large mixing bowl, combine all casserole ingredients. Beat until light and fluffy. 3. Place in 8 x 8 x 2 inch pan. For Topping: 4. Cream together butter, flour and sugar. 5. Stir in pecans. 6. Spread mixture evenly over top of potato mixture 7. Bake for approx. 50 minutes. Serve hot.
