  • 1/4 cup sugar
  • 1 1"-piece ginger, peeled, thinly sliced
  • 1 whole cardamom pod, cracked
  • 2 ripe peaches, peeled, sliced
  • 8 sprigs mint plus more for garnish
  • 8 ounces bourbon
  • 4 ounces fresh lemon juice
  • 12 ounces ginger beer

PreparationFor ginger syrup: Bring ginger, cardamom, sugar, and 1/4 cup water to a boil in a small saucepan, stirring to dissolve sugar. Let cool, then strain into a jar. Cover and chill. For assembly: For each cocktail, muddle 1/4 of peach slices and 2 mint sprigs in a julep cup or double Old Fashioned glass; add 2 ounces bourbon, 1 ounce lemon juice, and 1/2 ounces ginger syrup. Fill glass with crushed ice and add 2-3 ounces ginger beer. Garnish with a mint sprig.
