Mississippi Caviar
This is a great appitizer/dip to have on hand for any type of party. It is kind of like a bean and veggie salsa. We dip toritilla chips in it or you could use it as a garnish. We typically have this in the summer time, football parties, Christmas get togethers, and of course New Year's (it has black eyed peas in it....my Grandma told me it is good luck to eat black eyed peas on New Year's :) Overall, it is a fun and different dish to include in whatever gathering or party you are heading to!
