This is an awesome soup I discovered- I had to because they closed all of the Bennigan's in TeXas and need some good Baked Potato Soup!

  • 1/2 tsp salt
  • 1 tsp pepper
  • 2/3 c butter or 1 stick
  • 2/3 c flour
  • 6 c milk or 1/2 n 1/2
  • 1 can crm celery + 1 1/2 can water
  • 4 md/lg potatoes diced
  • chive onions (4 long) chopped
  • 4 cloves minced
  • 1 package turkey bacon- diced
  • 11/2 c cheddar cheese shredded

In big soup pan melt the butter- little by little add the flour until thickened. Slowly add milk, crm celery, and water until thickened. Add potatoes and onions. Add garlic, pepper, and salt. Put on Low/MD heat while you dice up the bacon- add bacon and simmer until potatoes are cooked. ~Your choice w/the cheese mix it in or put in individual bowls.~
