This is a highly modified version of many of the low-fat recipes that I have found. It si always moist and delicious and very easy to make.

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 egg
  • 1/2 cup sugar
  • 2 teaspoon vanilla extract
  • 3 tablespoon cinnamon
  • 1.5 cups all purpose flour
  • 2 tablespoon butter softened
  • 4 bananas (very ripe)
  • 1/2 cup applesause
  • 1/2 cup walnuts chopped medium
  • 1.5 teaspoon nutmeg freshly ground

1. Mash bananas into a mixing bowl 2. Add all other ingredients (except nuts) and mix well. 3. Fold in the nuts. 4. Pour into a greased loaf pan. 5. Bake at 350 degrees F for 50-60 minutes until a toothpick inserted into the center comes out clean. Notes: Nuts are optional, but I like them I use my canned applesauce for this so I know I am not adding any extra sugar You can make two small loaves, or do like I do and double the recipe and freeze one loaf after cooking.
